Happy November!!

Carrot (chocolate chip) cookies
1 cup white flour

1 cup whole wheat flour

1 teaspoon salt

1/2 cup brown sugar

1 cup granulated sugar

1 cup softened butter

2 eggs

1 teaspoon vanilla extract

1 package semi-sweet chocolate chips

1/2 cup finely chopped carrots

Finely chop up carrots into as-small-as-you-can-get-them pieces, set aside. Beat together softened butter and sugars until creamy. Add eggs and vanilla and mix well. Now slowly add in flour and salt until dough forms. Mix in chocolate chips and carrots. Drop mixture on to a greased cookie sheet and bake at 375 degrees for 11-15 minutes.

These are delicious!

football soup:
1.5 - 2 pounds of ground beef {use 2 if you like it meatier, less if you like soupier}
2 cans of mild rotel
2 cans of minestrone soup {i use progresso}
2 cans of red kidney beans
salt and pepper to taste

salt and pepper and brown the meat and set aside. in a large cooking pot, add all other ingredients and bring to a boil. add meat. reduce heat, cover and let simmer for 30-40 minutes.

it is MUCH better the next day! you can always triple the recipe too by using 3 or 4 of everything, if you have a lot of people you are feeding! just make sure you have a big pot to cook with!!!

Memaw's Chocolate Cake

Memaw's Chocolate Cake:
1 stick margarine
1/2 cup crisco
4T cocoa
1 cup water
bring these four things to a boil and pour over:
2 cups sugar
2 cups flour
2 well beaten eggs
1 cup buttermilk
1 t soda
1 t vanilla
dash of salt

Bake in a greased and floured pan (9x13) at 350 for 30 minutes (it usually takes a couple of minutes longer for the middle to be totally done for me)

Icing:
1 stick margarine
4 T cocoa
6 T milk (or water)
bring to a boil and pour over:
1 box powdered sugar
1 t vanilla

You can pour the icing over the cake before the cake and icing either one have cooled and then it's iced and the top layer of the cake is kind of gooey :)

1 box cornstarch
2 c. water (if too thick, add a little more water)

mix together and let your little one enjoy!

All-Natural Play Clay

you will need:
1cup flour
3/8 cup salt
1 tbsp vegetable oil
natural dye:
brown--3/8 cup plus 1 tbsp hot water & 4 tbsp cocoa powder
fuchsia--3/8 cup hot beet juice (we used the liquid from a 15-oz can of beets)
orange--3/8 cup hot water & 1 tbsp paprika
yellow--3/8 cup hot water & tbsp turmeric
In a medium-size bowl, combine the flour and salt. Pour in the oil and your chosen natural dye, and stir well. Knead the dough on a floured surface for a few minutes. If the clay is too soft, add a bit more flour. Store the clay in an airtight container in the fridge.

Super Fun Chicken Recipe!

2 TBSP lemon juice/Soy sauce
3 TBSP Olive Oil
2 TBSP Brown Sugar
2 cloves of diced garlic

Breakfast Ice Creams
by the Sneaky Chef

Really Easy Strawberry Breakfast Ice Cream
1 ½ c. frozen strawberries, (w/out sugar or syrup)
½ c. milk
1 tbsp. honey or sugar

Banana Breakfast Ice Cream
1 frozen banana (cut into pieces--about 1 cup)
2 tbsp plain yogurt
1 tbsp honey or sugar
For chocolate Banana Breakfast Ice Cream, add ½ teaspoon unsweetened cocoa powder to this recipe

For each recipe, putt all ingredients in a food processor (a 3-cup mini works well) and puree on high. Hold on tight! The first few seconds are a bit rough until the mix smoothes out. Each makes about 1 ½ cups of ice cream and serves 2 children.

Tips:

· To convert to a smoothie add an extra ½ cup of milk and process in a blender.

· To make popsicles pour into molds and freeze!

Coat chicken and let it sit for 10 minutes. Cook however you choose. Delicious!

sweet potato donuts...YUM

patriot and ally (our sweet sitter) cooking while mama cleaned the house:)
patriot is a very serious baker!
our yummy heart shaped donuts ended up a little more like sweet potato pretzels, but they were gobbled up by my little man! see below!

y'all have to try this recipe--your kids will LOVE it! i did sub the mashed sweet potato for a container of sweet potato baby food--but was still tasty! thanks again rose for giving us the recipe:)

The Ultimate Sloppy Joes

Prep Time: 20 min

Cook Time: 35 min

Level: Easy

Serves: 4 servings


Ingredients

Extra-virgin olive oil
1 large onion, diced
1 1/2 pounds lean ground turkey
Kosher salt and freshly ground black pepper
2 cups ketchup
1/4 cup yellow mustard
1/4 teaspoon cayenne pepper
1 tablespoon brown sugar
2 tablespoons tomato paste
1 tablespoon red wine vinegar
12 parker house rolls


Directions

Set a heavy-based pot over medium-high heat and add a 3-count of olive oil. Add onions and saute for 2 to 3 minutes until translucent. Add ground turkey, season well with salt and pepper
and brown well all over, breaking it up with a wooden spoon - about 7 to 10 minutes. Add
ketchup, mustard, cayenne, brown sugar and tomato paste. Reduce heat and simmer for 10 to
12 minutes. Finish with a splash of red wine vinegar and season it once more before
serving on parker rolls.

Sweet Potato Donuts
From Peas of Mind

1 3/4 cup flour
1/4 cup sugar
1/4 cup applesauce
1/2 of a sweet potato, mashed
1/2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
pinch of salt

Topping:
1 tsp cinnamon
2 tbs melted butter
2 tbs sugar

Preheat oven to 350. In a medium bowl, combine applesauce and sweet potato. In a stand mixer, combine all dry ingredients with a paddle attachment. Mix on low for 10 seconds and high for 35 seconds.

Prepare a floured surface. Knead donut mixture and roll out, using cookie cutters, make donuts in any shape and place on cookie sheet.

Bake for 6-9 minutes.

Combine butter, sugar and cinnamon and brush butter mixture on donuts.

Tonights Show- Fun Fun!

keep 'em busy with a tissue

* what's in here? wrap a tissue around a small object from your purse--a key, a lipstick---and see if you child can guess what it is from shape alone.
* costume contest--Punch out a couple of eyeholes to turn you tissue into a mask. While your child gets his imagination in gear, you can guess what he is----a lion? a robber?
* a lot of hot air---Wad up a tissue and let you kid see how far she can blow it across a table. Then crumple up another one and make it a race.
* we have liftoff---Use your tissue as a trampoline to launch smaller objects, like a mint or a penny, into the air and catch them again.

keep 'em busy with a mirror

*fog machine--Breathe on a pocket mirror to steam it up, then use your finger to draw a shape or a letter. Once your child ID's it, give him a turn.


* good day, sunshine--If you're outside or near a window, show your child how to reflect sunlight onto a nearby tree or the ground. By wiggling her hand, she can make the light dance.

We had a great time blowing bubbles with the help of Autumn, and Family Fun magazine. Using an empty water bottle, cut out the bottom and rubber band a wet washcloth to it. Dip the cloth in dish soap and blow on the bottle. This is what you get!

Basil Burgers- YUM!
Taken from Family Fun Magazine- July Edition


for the burgers:
1 1/2 pounds ground chicken/turkey
3/4 cup grated sharp cheddar or 1/2 cup parmesan
1/2 tsp. salt
1/4 ground pepper
1/3 cup mayonnaise
2 tbs pesto (store-bought or your own!)
6 burger rolls
lettuce
sliced tomatoes
oil for brushing the burgers

for the pesto may
1/2 cup mayo
2 tbs pesto

1. Line a baking sheet with plastic wrap, set aside. In a large mixing bowl, combine ground meat, cheese, salt, & pepper, gently toss together until blended.
2. In a small bowl, mix mayo & pesto, then add ground meat mixture and combine until evenly blended. Shape the meat into six 1/2 inch-thick patties, placing each on baking sheet, cover w/ plastic wrap in refrigerate for 30 minutes. (these patties will be softer than traditional hamburgers)
3.While the meat is chilling, prepare the grill and make the pesto mayo. Then brush one side of each of the burger with a little oil and place them on the grill, oiled side down. Lightly brush oil on the other side of the burgers and cook them for 5 minutes on each side, turning once, or until meat is to desired pinkness (or doness) inside. Serve burgers with roll and top with pesto mayo.

Grilled Bananas
For each, cut a banana crosswise into 1/2 inch wide slices and place the slices in the center of a 18 inch sheet of foil. sprinkle banana w/ 2 tsp of brown sugar, 1/2 tsp of lemon juice, and a dash of cinnamon. Dot the banana with 1/2 tbsp of butter cut into pieces. Bring the long edges of the foil together and fold them together. Crimp the short ends together above the packet to form a handle; make sure all seams closed tightly. Use a long stick to place on a warm grill or campfire. Let cook for 15 to 30 minutes. Remove packet from heat, place on plate, and carefully open. Let it cool. Top the banana with vanilla ice cream, if you like!

Cinco de Mayo Recipes:
Patriot’s Favorite Guac

4 avocados (deep brown & yield slightly to pressure) 
1 fresh lime (or orange, for a twist) 
1-2 cloves of fresh garlic 
1 fresh tomato (diced) 
Salt & pepper to taste
Half avocados and remove fruit with a spoon in to a bowl (leave at least one pit in the guac to help prevent browning).  Juice the lime (or ½ an orange:), dice the tomato and mince the garlic (or use a garlic press directly into bowl).  Add the lime juice, garlic, and tomato---stir well with a fork to mash everything together.   Add salt & pepper to taste.  Stir again.
We serve tortilla strips or goldfish for our little one to ‘dip’ into his guacamole.   Always a hit at our house:0)

Black Beans and Rice
4 standard sized cans of black beans 
½ yellow onion 
6  cloves of garlic 
1 bunch of cilantro 
8 oz. shredded Montery Jack Cheese 
2 c. whole grain brown rice 
2 avocados 
1 jar salsa 
1 c. sour cream 
1 bag tortilla chips 
 
Preheat oven to 350. Heat black beans in a pot over medium-high heat, keeping most of the juice.  Chop onion and  cilantro, mince garlic, and place all in a saucepan and sauté.  After beans have heated for 20 minutes, stir the sautéed ingredients into the black beans.  In a separate pot, begin preparing the brown rice (follow bag instructions).  Pour black bean concoction into a 13x9 inch pan and add shredded cheese on top, covering extensively.  Cover w/ aluminum foil and bake for 30 min at 325 degrees.
Serve black bean entrée over the brown rice, having a nice spread of chips, slices of avocado, salsa, extra shredded cheese and sour cream as toppings.

chicken enchiladas...

 
10 1/2 ounce can of "chicken a la king"  (that's actually what it is called and it comes in a soup can size, at wal-mart it is usually by the canned chicken/tuna, but if they don't have it, then I have substituted just a can of chunk chicken, which actually gives you way more chicken, and then I just mix in about a half a can of cream of chicken soup)
1/4 teaspoon black pepper
1/4 teaspoon oregano
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon chili powder
1/8 teaspoon ground cumin
2 1/4 cups monterey jack cheese (I sometimes get the mexican blend of cheeses)
1/2 cup salad oil
8 corn tortillas
1/4 cup sour cream (I usually use way more)
 
In a bowl, combine the chicken, all the spices, 1 1/2 cups of cheese.  Heat the oil in a skillet over medium heat.  When oil is hot, put each tortilla in the oil for a few seconds on each side.  (i've tried to skip this step, and the tortillas break and come apart when you are trying to roll them up)  Then fill each tortilla with filling, roll up and put in a baking dish.  Then spread the sour cream on top and sprinkle with the rest of the cheese.  Bake at 350 F for 20 minutes, or cheese is melted.

Marriage Tips and Shrimp Scampi

Marriage Recommendations:

Plan a date night, weekly, monthly, whatever you can do.

Spend 20 minutes daily

Make a list of three things you need from each other, separately. Talk about how to implement those things.

Create a maintenance program: If you are seeing a therapist, go back to him/her every 3-6 months to make sure that the emotional clutter doesn't pile up again.

1)Always show your appreciation for your partner/spouse. Saying "I love you" is good. But, showing your love is much better. Do this by giving her/him some things they like. It doesn't have to be pricey or extravagant. It just has to show that you care. For instance, my husband likes bottled water. I noticed that he was running low one day and while I was out, I got him a HUGE case for his desk. He smiled brightly and said thanks.

2) Talk about everything. When the channels of communication are open, the relationship thrives because there is nothing "off-limits" to talk about. From the smallest thing to big things, discuss everything. Never deem something insignificant.

3) Keep yourself up as much as possible. If you wore makeup and pretty clothes or worked out before you got married, it's just as important to do those things after you have been together for quite sometime. This applies to men just as much as women. Give them what they married, or at least close to it.

4) Keep a unified front at all times. This applies to children, in-laws, friends, family, neighbors, EVERYBODY! Never allow your marriage and personal business become the conversation of social functions. Keep the marriage business a private affair.

5) Treat each other with respect. This means verbal and non-verbal actions. Respect the person with their things, their space, their bodies. When you show them respect, they will show you respect.

shrimp scampi recipe

Ingredients

* 1 1/2 pound jumbo shrimp, shelled and deveined
* Kosher salt and freshly ground black pepper
* 2 tablespoons unsalted butter
* 2 teaspoons minced garlic
* 1/4 cup dry white vermouth
* 1 tablespoon freshly squeezed lemon juice
* 2 teaspoons finely chopped flat-leaf parsley leaves
* 1/4 teaspoon grated lemon zest

Directions

Put the shrimp on a large pie pan or plate and pat them completely dry with a paper towel. Arrange the shrimp so they lay flat and are evenly spaced.


Heat a large skillet over medium heat. Season the shrimp with salt and pepper. Add the butter to the skillet. When the foaming subsides, raise the heat to high, and invert the plate of shrimp over the pan so the shrimp fall into the pan all at once. Cook the shrimp, without moving them, for 1 minute. Add the garlic and cook for 1 minute. Turn the shrimp over and cook for 2 minutes more. Transfer the shrimp to a bowl.


Return the skillet to the heat and pour in the vermouth and lemon juice. Boil the liquid until slightly thickened, about 30 seconds. Scrape up any browned bits from the bottom of the pan with a wooden spoon. Stir the zest and parsley into the sauce. Pour the sauce over the shrimp, season with salt and pepper to taste and toss to combine.


Divide the shrimp among 4 plates or arrange on a platter and serve.

momeez--on holiday tonight!

hello mommies! we are taking a holiday today to celebrate president's day:) we will be back on air bringing your great tips, encouragement & recipes next week. in the mean time... please feel free to check out an achieved show and try out one of our yummy recipes we have talked about on the show this month:

Sopapilla Cheesecake

2 cans of crescent rolls (the kind for recipes would be great)
2-8oz cream cheese
1 tsp vanilla
1c.sugar

*mix cream cheese, vanilla & sugar
*lay out roll on bottom of 9x 13 pan (pinch together seams if used reg. crescents)
*spread cheese mixture on top
*add 2nd can of rolls as top crust

mix topping
1/2 c melted butter
1tsp cinnamon
1/2c. sugar

*drizzle all over top
*bake at 350 for 30min or golden brown and bubbly

enjoy!
Candy-Coated Popcorn

12oz of almond bark (vanilla bark coating)
2 bags of pop corn (plain or kettle worked well, but nothing too buttery)
sprinkles (your choice of color)

Pop corn (according to microwave directions) and let cool while melting bark. Melt the bark (i melted all 6 squares at once) according to package directions (about 90 seconds in microwave). In a large bowl add pop corn, pour in melted bark (i did in 2 batches so it was easier to stir) and add sprinkles. Stir until the bark coats the pop corn. Add additional sprinkles on top for color.

since i wasn't serving mine 'til the next day, i poured it out onto wax paper let it cool before i gently broke it up to put in my serving dish. i let people 'serve' themselves with my silver ice scoop out of our decorative ice bucket (i can upload a pic for ya, later).

Other options: for different holidays add different types of candy---candy corn in the fall, m&m's in holiday colors, etc.

Today's Show!

As a recap:

Make sure that you are drinking a lot of filtered h20!

Preferably in something other than reused plastic bottles.

Ricotta Pancakes

Ricotta Pancakes

# Prep Time:10 min
# Cook Time:30 min
# Level:Easy
# Serves:4 servings (16 pancakes)

2 cups water
1/3 cup sugar
1/3 cup honey
1 1/2 teaspoons vanilla extract
2 cups pancake and waffle mix (recommended: Krusteaz)
1 cup whole milk ricotta cheese
2/3 cup frozen blueberries
Melted butter


Stir 1/3 cup of water and sugar in a small saucepan over medium heat until the sugar dissolves, about 5 minutes. Stir in the honey. Set aside and keep the honey syrup warm.

Using a rubber spatula, stir the remaining 1 2/3 cups of water and vanilla in a large bowl. Add the pancake mix and stir just until moistened but still lumpy. Stir in the ricotta into the pancake mixture, then stir gently to incorporate the ricotta but maintain a lumpy batter. Fold in the blueberries.

Heat a griddle over medium heat. Brush with the melted butter. Working in batches, spoon 1/4 cup of batter onto the griddle for each pancake. Cook until golden brown, about 3 minutes per side. Serve with the honey syrup.

Messy Soap


Messy Soap / Clean Mush

cheese grater
1 bar of ivory soap
3 rolls of toilet paper
borax
warm water
plastic container with a lid
measuring spoons, cups, mashers, and other manipulatives

Grate ivory soap and mix with unrolled toilet paper, and 1/3 c of Borax in a large plastic container. Add warm water to saturate the mixture. Mix using bare hands. Offers a wonderful sensory experience for children. Clean up is a piece of cake, just snap on the lid!

Wilson Breakfast Casserole!

Recipe of the Week:

Breakfast Casserole
1 package crescent rolls (for recipes)
1 lbs sausage
2 c. mozzarella
4 eggs
3/4 c. milk
1/4 tsp. salt
1/8 tsp. pepper

Prep:
Spray w/ PAM or butter a 9x13 pan. Brown sausage and drain--set aside. In a separate bowl beat together, eggs, milk, salt & pepper.
Put together:
Take crescent rolls (the ones w/ out perforation work best) flatten on bottom of greased pan. Sprinkle broken up, drained sausage on top. Sprinkle 2 c. cheese on top. Pour egg/milk mix over the top.
Bake:
Bake at 425 for 15-20 minutes, or until eggs are set.
Let set 5 minutes before slicing.
