Thanks to all of our fabulous listeners, we had a very successful show on Monday Nite! We were thrilled to have so many of you in the chat room asking questions and helping each other with tips and ideas:)

Quick Recipe of the Day:
English Muffin Pizzas

ingredients:
1 english muffin (halved--sourdough is especially yummy)
2-3 Tbs. of your favorite Pasta Sauce (i used bertolli's in a jar)
5-6 cubes of cooked chicken
sm. handfuls of mozzarella cheese (enough to generously cover top of both halves)

Spread 1-1/2 Tbs of sauce on each half of the english muffin. Separate the chicken cubes into bite sized shreds to cover the surface of each muffin. Top generously with mozzarella cheese, covering all of the chicken and out to the edge. Pop in a toaster oven and cook at 350 for about 8 minutes, or until cheese has melted and muffin is hot to the touch. Add a sprinkle Parmesan cheese and enJOY:)
